Developing Fall detection sensor

Hi, I am new to Mikroe environment and I have been looking for programming examples online especially for the Accelerometer & Gyroscope. I know that the getting started source code is available however I am still unsure where to insert my own programming. I am currently trying to develop a fall detection sensor using the Accelerometer & Gyroscope which will send an emergency signal to a computer/phone.

I just want to ask where I would be able to declare global variables and if there are other things I need to configure beforehand in order to be able to use the sensor data as an output to trigger my emergency alarm.
